This AA Fully Washed blend from smallholders in Kirinyaga County, Nyeri, is known for its vibrant fruit complexity. It offers a wine-like acidity, a silky body, and the classic Kenyan flavors of black currant and red berries. Farmers carefully handpick ripe cherries, which are delivered to local washing stations for processing. At intake, cherries are hand-sorted to remove damaged, overripe, and underripe ones before pulping.

The coffee undergoes dry fermentation for 16 to 26 hours, followed by a clean water wash and grading. Parchment is then soaked for 12 to 48 hours, with fresh water replacements every 5 hours. After soaking, the parchment dries on raised beds for 7 to 15 days. During this time, it's turned frequently for even drying and covered during the hottest periods to control temperature. Damaged or discolored beans are removed during the drying process.

We are roasting with the 7kg Loring roaster in the shop which provides an efficiency and control of the quality, as the automated controls allow us to concentrate on creating the best coffee by releasing green beans from the hopper and precisely controlling the burner.
